Chicken Gumbo 1 cup shortening Brown flour in shortening in a very large pot; after flour is dark brown, add onions, parsley, celery and fry for about 2 minutes. Fill pot 3/4 full of water, adding salt and pepper to taste. Let boil for 5 minutes. Add chicken, smoked sausage, pepperoni, Shrimp and Oysters. Boil until chicken is tender. Last add 4 tablespoons of gumbo fillet.
