3 lg Tomatoes; peeled, seeded, & chopped
1 bn Green onions; chopped
2 md Carrots; peeled, chopped
1/4 c Fresh parsley; chopped
1 cl Garlic; crushed
2 tb Fresh basil leaves; chopped
1 cn 15-oz. red kidney beans; drained
2 Zucchini; sliced
2 c Cabbage; shredded
1/2 ts Fresh oregano; chopped
1/2 ts Salt
1/8 ts Pepper
5 c Beef broth or bouillon
1/4 c Dry red wine
2 c Cooked small elbow pasta
1/4 c Parmesan cheese; grated, opt
In slow cooker, combine tomatoes, green onions, carrots, parsley, garlic, basil, kidney beans, zucchini, cabbage, oregano, salt, pepper, broth, and wine. Cover and cook on LOW 8 to 9 hrs. Stir in cooked pasta. Sprinkle with cheese.
