Supa de Tarcan (Tarragon Soup)

1 lb Veal or lamb
Onion, chopped
2 x Celery stalks, chopped
1/4 c Tarragon, fresh, chopped
1 pt Sour cream
1 tb Flour
1 qt Water
Salt & pepper, to taste

Place meat in a pot to boil, removing foam as it boils. Add onion, tarragon and celery to soup when meat is boiled. Make a paste of sour cream and flour, adding a little soup to thin, then return to soup. Add salt & pepper.
