Green Garlic Soup

2 oz Butter
4 bn Green garlic, cleaned and roughly chopped
3 Potatoes, peeled and quartered
6 c Chicken stock
Salt and white pepper to taste
1 c Heavy cream

In a large pot, melt the butter and saute the green garlic. Add the potatoes and chicken stock. Cover and bring to a simmer. Cook for 30 minutes Puree he soup in a blender or food processor and pass through a fine strainer. Season with salt and pepper; add cream. Serve with garlic croutons.
