Corn Crabmeat Chowder
2 Tbsp. olive oil
1 large onion, chopped
1 tsp. crushed red pepper or Tabasco sauce to taste
2 Tbsp. flour
3 cups chicken broth or stock
1 cup corn
12 oz. Crab Meat flakes
1 cup buttermilk or sour milk (1 cup milk plus 1 1/2 Tbsp. lemon juice)
1 cup broccoli or zucchini, chopped
Put onions in oil to saute and add red peppers. Add broth and bring to boil. Add flour. Reduce heat to simmer and add corn, Crab Meat flakes, buttermilk, broccoli, salt and pepper to taste. (Best when made ahead of time to allow the red pepper flavor to spread.)
