Chicken Gumbo

1 cup shortening
1 cup flour
1 cup chopped onions
1 cup parsley
1 cup chopped celery
2 whole chickens, 3 lb. each
2 large smoked sausages
1 lb. Shrimp
1 lb. package pepperoni
1 pint Oysters
2 lb. rice


Brown flour in shortening in a very large pot; after flour is dark brown, add onions, parsley, celery and fry for about 2 minutes. Fill pot 3/4 full of water, adding salt and pepper to taste. Let boil for 5 minutes. Add chicken, smoked sausage, pepperoni, Shrimp and Oysters. Boil until chicken is tender. Last add 4 tablespoons of gumbo fillet.
