Chicken Gumbo with Rice

1 cup rice
1 chicken
3 medium size onions
50 Oysters
1 Tbsp. file or 1 cup cut up okra
Salt and pepper to taste


Place cut up chicken in pot; cover with cold water. After it boils, add onions, salt and pepper. Boil until tender; skim off excess grease. Ten minutes before serving, add Oysters and their juice and boil until the edges of the Oysters wrinkle. Remove from heat and add file. (If okra is used, instead of file, cook five minutes longer.) Serve over rice.
