Beet Soup

1 bn Beets Peeled; halved, sliced
1 Beet greens Washed and finely chopped
3 Stalks celery; diced
1 tb Lemon juice
Salt & pepper to taste
1 lg Onion; diced
4 Carrots; sliced
1 tb Vinegar
1 tb Horseradish
1 cn Tomato soup


Put vegetables in a large pot with water to cover. Add remaining ingredients and mix thoroughly. Simmer 2 - 2 1/2 hours, until beets and carrots are tender.
