Green Pea Soup
1 qt Fresh or frozen peas
1/2 c Parsley
1/4 c Fresh mint
1/2 c Green onions; chopped
1 qt Beef bouillon
2 c water
2 tb Butter or margarine
1 ts Sugar
In a soup pot combine the peas, parsley, mint, green onions, and
bouillon. Cook until the peas are thoroughly tender. You may need
to add a little water. Drain the peas, reserving the liquid. Put
the peas through a food mill or a blender. Return puree to the
broth; reheat. Just before serving, add the butter and sugar. Serve
with croutons. Makes 2 cups or 4 servings.
