Cream of Celery Soup

1 1/2 c Chopped celery
1/3 c Chopped onion
1/2 ts Salt
1 c Water
2 1/2 c Milk
1/2 c Milk
3 tb All-purpose flour
1/2 ts Salt
1/8 ts White pepper
2 tb Butter

Cook 1 1/2 cups chopped celery, 1/3 cup chopped onion, and 1/2 teaspoon salt in 1 cup water, covered, about 15 minutes or till tender. Do not drain. Add 2 1/2 cups milk. Blend 1/2 cup milk, 3 tablespoons all-purpose flour, 1/2 teaspoon salt, and 1/8 teaspoon white pepper; add to celery mixture. Cook and stir till bubbly. Stir in 2 tablespoons butter. Season. Serves 6.
