Clam Chowder

4 tb Butter
1 md Onion, sliced
1 Bay leaf
2 tb Flour
3 1/2 c Milk
1 c Minced clams
2 c Cubed cooked potatoes (4 mdm)
1 1/2 ts Salt
1/8 ts Pepper
1/8 ts Paprika

Melt butter in large saucepan. Saute onion until tender but not brown. Add bay leaf; blend in flour. Grdually add milk, stirring constantly. Cook for 5 minutes, until thickened. Remove bay leaf. Stir in clams, potatoes, salt, pepper, and paprika. Heat thoroughly; do NOT boil.

Serves 4
