Leek Soup

1 1/2 lb Leeks (about 6 cups) washed, trimmed, and cut into 1 in. pieces
3 c Chicken Broth
2 Apples, peeled and cut into 1/2 inch pieces
1 Potato, peeled and thinly sliced
1/2 c Orange Juice
1/2 c Tomatoes, chopped
1/2 c Carrots, thinly sliced
1 tb Fresh basil OR 1 1/2 t dried
1/2 ts Curry Powder
Salt and Pepper to taste

Combine all ingredients in a soup kettle. Cover and bring to a boil. Simmer 20 - 25 minutes. Remove from heat and cool slightly. Process in batches, in a blender or processor until smooth. Reheat and serve.
