Delicate Snow Pea Soup

4 c Chicken stock
1 c Finely chopped bok choy
1/4 c Thinly sliced mushrooms
2 oz Tofu, cut in small cubes
1 cl Garlic, minced
3/4 ts Grated ginger
1 ts Low sodium soy sauce
1 c Fresh snow peas
1/4 c Diced green onions with tops
1 Egg white, lightly beaten, optional


Bring all ingredients except snow peas, green onions and egg whites. Simmer 20 minutes. Add snow peas and green onion. cook 5 minutes; slowly stir in egg white, if desired, to make a ribon effect. Makes 6 servigs.

Variation: For a creamy soup, add 1 heaping teaspoon cornstarch mixed incold water plus 1/2 teaspoon light soy sauce. Add to soup, heat until thick and bubbly.
