Chicken and Rice Soup

2 tb Butter or margarine
2 Carrots, sliced
2 Stalks celery, sliced
1/2 c Chopped green pepper
1 sm Onion, chopped
4 c Homemade chicken stock
1/4 c Uncooked long grain rice
1 1/2 c Chopped cooked chicken
1 lg Tomato, skinned and chopped
Salt and pepper to taste
1/2 c Frozen peas


Melt butter in large saucepan. Add carrots, celery, green pepper, and onion. Saute 6 minutes, stirring occasionally. Add broth, rice, chicken, tomato, salt and pepper; simmer 20 minutes. Add peas; sinner 5 minutes or until heated through. Serve piping hot.
