Creole Gumbo

1/4 cup oil
1/4 cup flour
2 cloves chopped garlic
1 (10 oz.) package frozen okra, sliced
1 lb. can tomatoes
1 lb. Crab Meat
1 lb. peeled Shrimp, uncooked
1 small chopped onion
1/2 cup chopped celery
1/2 cup chopped bell pepper
1 Tbsp. chopped fresh parsley
2 bay leaves
1/4 tsp. thyme
1/4 tsp. pepper
1/2 tsp. salt or to taste

Brown flour in oil. Add onion, celery, bell pepper, and parsley. Simmer 10 minutes. Add garlic, okra, and tomatoes. Cover with hot water; simmer, covered 15 minutes. Add remaining ingredients. Add water to desired consistency, being careful not to thin too much. Cook at a low boil for 15 minutes. If gumbo is too thick, add a small amount of boiling water.
