Creole Gumbo

2 1/2 c Cut okra
3 tb Ham dripping or fat
1 lg Onion; chopped
2 cl Garlic; chopped
1 md Green pepper; chopped
1 cn (8 oz) tomato sauce
1/2 c Crab meat
1 ts Thyme
2 tb Flour
1/2 pt Oyster with liquid
4 c Water
3 tb Ham; diced
2 md Bay leaves
1 ts Parsley; chopped fine
1 ts Salt
ds Pepper
1/2 ts Cayenne pepper

Heat cooker. Brown okra lightly in hm drippings in cooker. Combine remaining ingredients in cooker and mix well. Place cover on cooker. Allow steam to flow from vent pipe to release all air from cooker. Pressure cook at 15 lbs. pressure for 15 minutes. Reduce pressure. Serve with whole-grain rice.
