Smoked Sausage Soup with Potatoes and Greens

1 tb Olive oil
1 lg Onion, chopped
1/2 lb Smoked kielbasa sausage, casing removed, thinly sliced, then quartered
5 c Water
1 cn (19-oz.) Geat Northern beans, drained
3/4 lb (2 medium) russet potatoes, peeled and cubed
2 c Fresh spinach leaves, coarsely chopped
1/2 ts Salt
Freshly ground black pepper
1 tb Red wine vinegar


Heat oil in large heavy saucepan over medium-high heat. Add onion and cook 3 minutes or until it begins to brown. Add sausage and cook 3 minutes or until it begins to brown. Add water, kidney beans, and potatoes and bring to a boil. Reduce heat and simmer for 20 minutes or until potatoes are tender.

Just before serving, add spinach, salt, pepper, and vinegar. Pass the peppermill at the table.
