Bread Soup

2 Cloves garlic
2 ts Salt
1/2 ts Oregano
Pepper; to taste
2 tb Olive oil
3 tb Cider vinegar
2 c Tomato puree
1 c Diced cucumber
2/3 c Chopped red pepper
3 c Bread cubes
1 c Cooked shrimp
1/4 c Minced green pepper

Crush garlic, salt, oregano and pepper in a mortar and pestle. Blend in 2 tablespoons olive oil. Transfer to a large bowl and add the vinegar, tomato puree, cucumber, red pepper and bread cubes. Stir in just enough ice water to give consistency of very soft mashed potatoes. Let stand for 30 minutes. Mix in the shrimp. Serve, garnished with minced green pepper.

Yield: 4 servings
