Creamy Vegetable Soup

1 ts Olive oil
1/4 c Apple juice or white wine
2 c Chopped broccoli
1 c Chopped onion
1 ts Minced garlic
1 ts Dried thyme
1/2 ts Dried basil
3 c Vegetable stock
1 c Cooked rolled oats
Cayenne pepper to taste


In large saucepan, combine oil, juice or wine, broccoli, onion and garlic. Cook, stirring frequently, until vegetables are softened, about 15 minutes. Add thyme, basil and stock. Bring to a boil. Reduce heat, cover and simmer for 10 minutes. Transfer mixture to food processor or blender. Add oatmeal and process until thick and creamy. Return to pot and add cayenne pepper to taste.
