Allium Soup

2 md Onions; Cut In Half And Thinly Sliced
2 Leeks; Washed And Thinly (2 to 3) Sliced, white part only
2 bn Scallions; chopped
2 Cloves Garlic; crushed (2 to 3)
2 ts Minced Fresh Ginger
9 c Water
1/4 c Soy Sauce
Freshly Ground Black Pepper; to taste
1 pn Ground Cayenne

Place the onions, leeks, scallions, garlic, and ginger in a large soup pot with 1 cup of the water. Cook, stirring over medium heat for 5 minutes. Add the remaining ingredients, reduce the heat to low, cover, and cook for another 55 minutes to allow flavors to blend.

Variation: For a heartier soup, add 2 potatoes, peeled and cut into chunks, when you add the remaining ingredients.
