15 Bean Soup

2 c. bean soup mix
2 qt. water
1 lg. onion, chopped
1 clove garlic, chopped
1/2 tsp. salt
16 oz. can stewed tomatoes, undrained
10 oz. can tomatoes & green chilies, undrained
5.5 oz. V-8 spicy (optional)


In large pot add beans, water, onion, garlic and salt. Cover and bring to a boil. Reduce heat and simmer 2 hours or until beans are tender. Add remaining ingredients and simmer 30 minutes, stirring occasionally. (Can be served over rice.)
