8-10 Bean Soup

1 lb. 8-10 bean soup mix or you can use 1 kind of beans, try black beans
1 onion
1 clove garlic, chopped
1/2 tsp. thyme
1 tsp. chili powder
Juice of 1 lemon or 2 tsp. lemon juice, bottled
1/2 chopped green pepper
1 (16 oz.) can tomatoes
2 ham hocks or smoked turkey parts or ham bones

Wash beans, place in kettle. Add water 2 inches above beans, 2 teaspoons salt. Soak overnight. Add 2 quarts water and ham hocks. Bring water to boil. Add onion, tomatoes, chili powder, thyme, garlic, green pepper and lemon juice. May simmer 5 hours on low in crock pot. Makes 4 quarts soup.
