Apple Soup

4 c. quartered, unpeeled McIntosh apples
4 to 5 c. water
1/4 c. sugar
1 tsp. cinnamon or to taste
1/4 tsp. ground cloves (optional)
2 to 3 tbsp. sour cream
1 tbsp. flour


Place apples and water in a large pot. Cook until apples are very tender. Press through a sieve or food mill. Add sugar, cinnamon and cloves. Bring to a boil. Mix sour cream and flour together and whisk into hot apple mixture. Do not reboil or it will curdle. Serve with dumplings, macaroni or croutons.
