Bean Soup

1 lb. Great Northern dry beans
Small piece of salt pork or a ham bone with some meat
3 lg. onions, chopped
2 tomatoes or sm. can tomatoes
2 1/2-3 tbsp. sugar (better taste)
Pinch of salt
1/2 tsp. thyme, crushed between fingers


Soak beans overnight. Cook with 1/2 teaspoon salt and small piece of salt pork or ham bone until tender. (Cook salt pork separately first before tossing in with beans and save this water.) Mash beans and put back in pot with cooking water from beans and pork. While coming to boil, add 3 large onions, chopped, 2 tomatoes or 1 small can tomatoes, 2 1/2-3 tablespoons sugar (better taste), pinch of salt, 1/2 teaspoon of thyme which has been crushed between your fingers before putting in. Boil until right consistency.
