Bean Soup

1 lb. lean smoked bacon
3 med. onions
1 med. clove garlic
2 c. dry white beans
1 sm. can tomato paste
Salt, pepper and paprika to taste

Wash beans and then soak overnight in 4 1/4 cups water. Cut very lean smoked bacon in small cubes, dice onions, mince garlic and cook in large kettle. Add a tablespoon of flour; mix and add beans to mixture. Bring to a boil, then cover and simmer for 60 minutes. Add tomato paste; stir and season to taste. Serve soup with fresh French bread and a dry wine.
