Beef and Barley Soup

4 carrots, diced
1 lb. fresh beef, cut into sm. bite-size pieces
1 can V-8 juice
1 can whole tomatoes
1/4 c. barley
1 tsp. parsley
1 bay leaf
Salt and pepper to taste
1 can mushrooms or 5 fresh mushrooms, sliced
1/2 onion
2 c. water

Combine all ingredients into large pot. Cook until beef and carrots are done. Serve with your favorite sandwiches or hot rolls.
