Beer Cheese Soup

1/4 c. melted butter
1/2 c. flour
1 1/2 qts. chicken broth
*1/2 c. finely chopped onion
*1/2 c. finely chopped celery
*1/2 c. finely chopped carrots
1/2 lb. shredded Cheddar cheese
1 1/2 c. milk
12 oz. beer
1/2 c. chopped parsley
1/2 tsp. salt
Dash of pepper

*May also mince. Add flour to melted butter and brown. Slowly add broth stirring constantly with a whisk. Cook until slightly thickened. Add vegetables and simmer 20 minutes. Stir in cheese until melted. Add milk and beer. Reduce heat immediately. Add parsley and cook at reduced heat. Season to taste with salt and pepper. Serve hot. 8 servings.
