Broccoli Cheese Soup

1 lb. Velveeta cheese
2 tbsp. butter
6 c. milk
3/4 c. chopped onion
6 c. water
6 chicken bouillon cubes
8 oz. fine noodles
2 pkgs. chopped broccoli
Clove of garlic
Salt & pepper to taste


Melt butter and saute onions. Heat water and bouillon cubes, bring to boil. Add onion, then add noodles and salt. Cook, uncovered for 3 minutes, stirring occasionally. Add broccoli and garlic. Cook 4 minutes until well mixed. Add milk and cheese, cut up in squares; stir constantly until cheese melts. Makes 4 quarts.
