Broccoli Cheese Soup

1 lb. bunch fresh chopped broccoli
2 tbsp. butter
2 shallots (or 1 sm.) minced onion
1 clove mince garlic
2 tbsp. flour
4 c. chicken stock
2 c. shredded sharp Cheddar cheese
Salt & pepper to taste


Boil or steam broccoli until tender. As broccoli cooks, melt butter. Saute shallots and garlic until tender. Sprinkle with flour and stir over low heat until blended. Add stock and continue stirring until mixture is smooth. Add cheese and stir until melted and smooth. Add broccoli and heat slowly. Season with salt and pepper, if desired.
