Broccoli Cheese Soup

1/2 stick margarine
1/2 onion, grated
2 carrots, grated
1 (10 oz.) box frozen chopped broccoli
1 can either cream of chicken or cream of mushroom soup
1 soup can milk
1/2 to 1 lb. Velveeta cheese, grated
Mushrooms (optional)

Saute onions and carrots in margarine until soft. Cook broccoli according to package directions; drain. Add together and heat over medium heat. Add soup and milk. Heat through. Add grated cheese. Cook until cheese melts.
