Cheddar Soup

2 c. boiling water
2 c. potatoes, diced
1/2 c. carrots, chopped
1/2 c. broccoli, chopped
1/4 c. onions, chopped
1 1/2 tsp. salt
1/2 tsp. pepper
1/4 c. margarine
1/3 c. flour
2 c. milk
1 c. cheese, shredded


Add water to potatoes, carrots, broccoli, onions, salt and pepper. Cover; simmer 10 minutes. Do NOT drain. Make white sauce with flour and milk. Add cheese; stir until melted. Add undrained vegetables. Heat - do NOT boil. Makes 6-8 servings.
