Cheesy Potato Soup

3 carrots, grated
1 onion, chopped
3 stalks celery, chopped
Butter (not oleo)
2 cans chicken broth
2 cans cream of potato soup
1 can chopped green chilies
1 lb. grated Velveeta cheese
8 oz. sour cream

Saute carrots, onion and celery in melted butter. Add chicken broth, cream of potato soup and chopped green chilies. Simmer for 30 minutes. Add cheese and simmer another 30 minutes. Just before serving, add sour cream. Serve in soup boats.
