Chicken and Shrimp Gumbo

5 pounds stewing hen -- cut up
1/2 cup shortening
1 cup chopped onion
1/2 cup chopped fresh parsley
1/2 teaspoon pepper
2 pounds uncooked shrimp
1/2 cup chopped green onion
3 1/2 teaspoons salt
1/2 cup flour
2 tablespoons Worcestershire sauce
1 tablespoon lemon juice
1/2 teaspoon thyme
1/2 cup chopped celery
1 teaspoon file powder


Sprinkle chicken with 1.5 tsp of salt. Melt shortening in a large heavy pot. Add chicken pieces; brown, turning on all sides, for about 15 minutes Remove chicken.

Stir flour into hot fat in with chicken was browned. Stir constantly, keeping heat low, until flour is dark brown. Add chopped
