Chicken Fajita Soup

2 lbs. chicken tenders
Vegetable cooking spray
1 cup diced onions
1/2 cup green onions, sliced
1 red bell pepper, sliced
1 packet less-sodium taco seasoning mix
4 cups low-sodium V-8 vegetable juice
1 1/2 cups black bean and corn salsa
1 jalapeño pepper
4 tbls. fat-free sour cream
Baked cheese-flavor pita snax

In a medium-size skillet sprayed with vegetable cooking spray, brown chicken tenders over medium-high heat.

Cut chicken tenders into bite-size pieces and set aside. Meanwhile, sauté onions and bell pepper over medium heat.

Place chicken and vegetables into slow cooker and add seasoning mix, juice, salsa and jalapeño pepper. Cook on low for 6 to 8 hours.

Ladle into 4 serving bowls and top each with 1 tablespoon fat-free sour cream. Serve with cheese pita snax.

Makes 4 servings.
