Chunky Vegetable Soup

10 1/2 oz. beef broth
28 oz. crushed tomatoes
2 c. water
1 c. sliced carrots
1 c. cubed potatoes
1/4 c. diced celery
1/4 c. chopped parsley
1 bay leaf
1 pkg. 1 1/2 oz. onion soup mix
1/2 tsp. basil
1/4 tsp. pepper
1 1/2 lbs. ground beef or chuck
1 egg
1/2 c. dry bread crumbs
1/2 med. potato (grated)
1 onion, chopped
1/4 c. milk
1 tbsp. chopped parsley
1 tsp. salt

Mix first eleven ingredients in large pot. Cook until soup comes to a boil then simmer 30 minutes. Mix the last eight ingredients in a large bowl. Shape into small balls and brown in oil in skillet. Add meatballs to soup and continue cooking 45 minutes or longer.
