Crab Soup

1/4 c. butter
1/4 c. chopped onion
1/4 c. minced celery
2 tbsp. chopped parsley
1/4 c. flour
3 c. Half & Half or milk
1/2 c. dry white wine
1 c. fresh crabmeat
2 tsp. seasoned salt
1 tsp. white pepper
1/2 tsp. ground mace
1 tbsp. butter

Place 1/4 cup butter in a 2-quart batter bowl and microwave on HIGH 45 seconds. Stir in onions, celery and parsley. Cover and microwave on HIGH 4 minutes. Stir in flour with whisk. Gradually whisk in milk. Stirring with whisk every 2 minutes, microwave on HIGH until mixture thickens, about 8 minutes. Add wine, crabmeat, salt, pepper and mace. Microwave on MEDIUM-HIGH (70 %power) 6 minutes. Garnish soup with butter and paprika. Serve with oyster crackers or hot French bread. Makes 6 servings.
