Cream of Potato Cheese Soup

1/2 c. thinly sliced onions
1/4 c. butter
3 c. thinly sliced potatoes
2 c. chicken broth
1 tsp. salt
Dash of pepper
1 chicken bouillon cube
1 c. shredded cheddar cheese
2 1/2 c. milk


Saute onion in butter. Add potatoes and 1 cup broth, salt and pepper. Cover and simmer until potatoes are tender (about 20 minutes). Break up potatoes into small chunks. Add remaining broth, milk, bouillon cube and cheese. Heat and stir until cheese is melted. 7 to 8 cups or 6 to 7 servings.
