Cream of Potato Soup

1/2 c. onion, finely chopped
4 lg. potatoes
1 1/2 qts. water
2 tsp. salt
1 tall can evaporated milk
Dash pepper

Peel and dice potatoes; add onions, water and salt. Boil until tender. Drain, reserving the water. Mash potatoes and combine with water and milk. Heat to boiling. Add mashed potatoes and pepper to your taste. Blend thoroughly. Serves 6 to 8.
