Cream of Spinach Soup

1 (10 oz.) pkg. frozen chopped spinach, thawed
3 tbsp. all-purpose flour
1 thin slice onion
1 1/2 c. milk
1 c. chicken stock
Salt & fresh ground pepper
Chopped green onion (garnish)

Combine spinach, flour and onion in blender and puree. Add milk and chicken stock and puree until smooth. Pour into 2 quart bowl. Cover and cook on Medium (50 percent power) until thickened, stirring once or twice, about 10 to 12 minutes. Taste and adjust seasoning. Top with green onion.
