Cream of Zucchini Soup

1 c. sliced onion
1/2 c. dry white wine
2 c. chicken stock
1/3 c. raw white rice
6 c. cubed zucchini (don't peel)
2 c. water
Salt and pepper to taste

Simmer onion, wine, and stock 10 minutes. Add rice, zucchini, and water. Also salt and pepper if you like. Simmer 12 minutes. Strain keeping liquids to add as needed in blender. Puree solids adding liquid as needed. Return to pan add milk if too thick! May also use cucumber, peeled and seeded.
