Creamy Vegetable Soup

1 lg onion -- chopped
1/4 cups butter
3 med sweet potatoes -- peeled, chopped
3 med zucchini -- chopped
1 bunch broccoli -- chopped
2 qts fat-free chicken broth -- or vegetable broth
2 med red potatoes -- shredded
3 cloves garlic -- minced
14 1/2 ozs corn, cream-style, Del Monte -- or 3/4 c fresh corn
1 tsp celery seed
1 tsp ground cumin
2 tsps salt
1 tsp pepper
2 cups fat-free half and half

Place all ingredients in a 4 to 5 quart crockpot except cream. Cook on the low setting 6 to 8 hours or until sweet potatoes are tender. Ten minutes before serving, add the cream, if using. Heat through and serve.
