File Gumbo

2 lb. shrimp, peeled & deveined
1 can crab claw meat
1 sm. jar oysters with liquid
1 lb. smoked sausage
1/2 lb. ham (opt.)
1 bunch shallots
1 celery heart (light center only)
1 cooking spoon flour
8 c. water
1 cooking spoon Kitchen Bouquet
2 sm. pieces garlic
2 tbsp. parsley flakes
Salt & pepper to taste
File seasoning (1 lg. cooking spoon)


Cut sausage into small round pieces; fry off; add ham and fry 3 minutes. Remove from pan. Place chopped celery and shallots in same grease from sausage and fry off until tender. Add garlic and flour, stirring lightly. Add parsley and water, Kitchen Bouquet; stir. Return sausage and ham to pot, add shrimp, crab meat and oysters with their water. Cover and cook 1 hour. Turn off fire, add file. Heat again until rolling boil, stirring. Liquid should be slightly ropy. If not add more file.
