Finnish Fruit Soup

1 1/2 lb. mixed dried fruit (apricots, prunes, pears, apples & raisins)
2 3/4 qt. (11 c.) water
1 cinnamon stick
1 1/2 c. white sugar
2 tbsp. cornstarch
2 tbsp. cold water

Simmer dried fruit in water with a cinnamon stick and sugar until fruit is tender, about 30-60 minutes. Mix the cornstarch in 2 tablespoons water. Bring soup to a boil and stir in the cornstarch mixture. Pour this mixture into fruit pot and simmer until thick. Can be served cold or hot with cream.
