Fresh Cream of Mushroom Soup

1 lb. chopped mushrooms
1 diced onion
1/2 lb. butter
1/2 pt. whipping cream
1/2 c. flour
Salt & pepper to taste
1 qt. chicken stock
Bay leaf & a pinch of thyme

In saucepan saute onions in butter. Add mushrooms and allow to cook until almost dry then add flour to soak up butter, season with salt and pepper. Add chicken stock. Stir well. Bring to a boil and then reduce heat to simmer for about an hour, remove from heat. Add whipping cream and serve immediately.
