Garlic Soup

4 lg. cloves garlic
2 tbsp. extra-virgin olive oil
4 thick slices good, chewy French bread
Pinch of Spanish paprika
4 bouillon cubes
6 c. water
Salt and freshly ground pepper

Fry garlic and bread in oil until lightly browned. Add remaining ingredients and boil 15 minutes. If slices of bread have remained firm, as they should have done, serve as is. If they have become soft and soggy, as American bread tends to do, beat with a whisk until smooth and then serve.
