Hint-of-dill Zucchini Soup

6 c. chicken stock, commercial or homemade
9 c. unpeeled zucchini, coarsely chopped
1 med. clove garlic
1/2 c. minced parsley, fresh or dried
1 tbsp. dried basil
1/2 tsp. salt
1/2 c. sour cream
1 1/2 tsp. dried dill weed
1/2 tsp. white pepper
3 drops green food coloring
Slivered almonds


Combine all ingredients except sour cream and food coloring in a saucepan. Bring to a boil and simmer for 10 minutes. Transfer in batches to a blender and puree. Pour all back into saucepan, add sour cream and food coloring. Heat thoroughly but do not boil! Ladle into bowls and add 1 teaspoon slivered almonds to each serving. Serves 6 to 8.
