Italian Sausage Vegetable Soup

1 lb Italian sausage
1 (16 oz.) can stewed tomatoes
1 (8 oz.) can tomato sauce
2 tbsp. granulated beef bouillon
2 tsp. sugar
1 c. carrots, sliced
1 c. onions, chopped
1 c. celery, chopped
1 c. zucchini, chopped
1/4 c. parsley, minced
1/2 tsp. Italian herb seasoning


Remove casing and cut up sausage; brown and set aside. Place tomatoes, sauce, 1 cup water, bouillon and sugar in saucepan. Bring to a boil. Add vegetables and seasonings. Return to boil, reduce heat and simmer 10 minutes. Add sugar and simmer 10 to 15 minutes. Grated Parmesan cheese may be sprinkled on each serving. Serves 6 to 8.
