Low Fat Ham and Bean Soup

1 lb. dried Great Northern beans
6 c. water
1/2 lb. lean ham
2 tsp. salt
3 cloves garlic, minced
2 c. water
4 med. potatoes, peeled & quartered
3 carrots
1 med. onion

Soak beans. Combine beans with cup water, ham, salt and garlic in a large Dutch oven. Bring to boil. Cover and reduce heat and simmer 1 1/2 hours. Add 2 cups water and vegetables to beans. Cover and simmer about 30 minutes.
