1 med. onion, chopped
1 stalk celery, chopped
2 med. carrots, chopped
1 c. fresh or frozen green beans
1 med. zucchini, chopped
1 pkg. frozen chopped spinach
1 (28 oz.) can tomatoes
1/2 c. unbaked macaroni
1 can navy beans with juice
1/4 tsp. basil
1/4 tsp. oregano
1/4 tsp. cayenne pepper
Water as needed
Combine all ingredients in a large pot. Bring t a boil, then reduce heat and let simmer for about 30 minutes until all vegetables are tender Add water if necessary to make enough liquid to cover ingredients. Makes about 12 cups.
