3 tbsp. butter
2 onions, chopped
2 cloves garlic, minced
3 qts. water
4 carrots, sliced
2 potatoes, diced
4 tbsp. beef bouillon
1/2 tsp. each basil, oregano, thyme, pepper
1 can (sm.) tomatoes
2 sm. zucchini, sliced
2 c. shredded cabbage
2 c. shredded spinach
1/4 c. elbow macaroni
1/4 c. spaghetti, broken
12 rigatoni
Salt to taste
Optional - Parmesan cheese

Melt butter in 6-8 quart kettle over medium heat. Add onion and garlic. Cook until limp. Stir in water, carrots, potatoes and tomatoes. Cover and simmer 10 minutes, then add zucchini, cabbage, spinach, macaroni, spaghetti, rigatoni, spices and bouillon. Return to boil, cover, reduce heat and simmer 15-20 minutes. Season to taste with salt. Sprinkle with cheese if desired. Makes 4 quarts.
